Hillbilly Cake

From the Jankowski Family Recipe Box

Ingredients 

1 1/4 Cup	Boiling Water
1 Cup	Oatmeal
1/2 Cup	Oleo or Margarine
1 Cup	Sugar
2	Eggs
1/2 tsp	Cinnamon
1/2 tsp	Salt
1 1/2 Cups	Flour
1 tsp	Baking Soda
1 Cup	Brown Sugar

Directions

Preheat oven to 350 degrees and prepare cake pan.  Combine the oatmeal and the boiling water let stand.  Combine the oleo, sugar, eggs, cinnamon, salt, flour and baking soda.  Pour into the oatmeal mixture then add the brown sugar.  Pour batter into cake pan and bake until toothpick inserted into center comes out clean.  

Frosting

Ingredients

6 Tbsp	Shortening or oleo
1 Cup	Nuts
1 tsp	Vanilla
1 Cup	Sour Cream
1/2 Cup	Brown Sugar
1 Cup	Coconut

Directions 

Mix and spread on cake while it is hot and put under broiler until brown.
